Kazan Restaurant a Story

A Kazan is a type of large cooking pot used throughout Central Asia,Azerbaijan, Turkey, Armenia and the Balkan Peninsula. Kazans are made of cast iron or in modern times aluminum and are used to cook a wide variety of foods, including plov, sumalak, shorpa, kesme and bawyrsaq and as such are an important element in celebrations when food must be prepared for large numbers of guests. The belief that the city of Kazan in Tatarstan is named after this object comes from the terrain’s similarity to a kazan: the city is situated in a U-shaped lowland. Another, more romantic legend tells a story of a Tatar princess Soyembika, who dropped a golden kazan into the river while washing it, and that the city was founded at that site.
